Here's a second pineapple treat! :D
Makes 16-18
Ingredients
2 cups plain flour
2 tsp bicarbonate of soda
1/2 tsp salt
1/2 cup vegetable oil
3/4 cup soya milk
3/4 cup unsweetened applesauce
1 tsp vanilla extract
1 1/2 cup sugar
8 oz/ 125 g tin crushed pineapple, drained
Method
- Preheat oven to 160 degrees C. Line muffin trays with cupcake liners.
- In a mixing bowl, combine the flour, bicarbonate of soda, and salt.
- In another bowl, mix the oil, milk, applesauce and vanilla. Stir in the sugar and pineapple until well combined.
- Add the flour mixture to the wet mixture, spoon into the cupcake lines and bake for 23-25 minutes.
