Healthy but yummy, what more can you ask for? Don't worry if you're craving something sweet, I have two yummy valentine's treats planned for next week. Be excited :DMakes 12
Ingredients
1 3/4 cup plain flour
1 cup oats
2 1/4 tsp baking powder
2 tsp sugar
1/2 tsp salt
1 1/4 soya milk
1/4 cup oil
2 tsp dijon mustard
2 cloves crushed garlic
chili powder to taste (optional)
1 1/4 cups finely chopped broccoli
3/4 cup chopped yellow onion
Method
- Preheat oven to 200 degrees C and line a muffin tray with muffin cups.
- In a large bowl combine the flour, oats, baking powder, sugar and salt.
- In another bowl, mix the milk, oil, mustard and garlic until well blended. Stir in the broccoli and onions.
- Add the wet ingredients to the dry and fold until just combined. Divide the batter between the muffin cups and bake for 20 minutes or until a toothpick comes out clean. Allow to cool in the tray for five minutes before transferring to a wire rack to cool completely.
